Provide students with updated information about the relationship between diet, metabolism and health. The interplay between nutrition, metabolism and inflammation will be discussed considering recent publications.
Novel scientific findings and their relationship with classical principles of nutritional biochemistry and physiology as well as new developments in methods to assess the relationship between diet, nutrition and metabolism will be discussed.
Technical developments that took place in the
last decades allowed for a substantial leap in the capabilities to assess
metabolism. These include the popularization and refinement of techniques such
as mass spectrometry and gene sequencing, leading to the establishments of new
areas of research such as metabolomics, transcriptomics and metagenomics. The
results from these fields of research haven’t yet been translated into textbook
knowledge. It is very important that the students receive proper training and
have the chance to discuss these novel findings.
